I used to have a favourite sushi place where we would sit at the bar and chat with the chef. One day we happened to catch him when he was filleting some salmon and it was beautiful to watch him in action. I live in a pretty outdoorsy place and have fishermen friends. I’ve had salmon filleted in my kitchen before by these amateurs and it was nothing like watching this chef work.
It won’t matter if they have it if they don’t know how to use it. I have a coworker who I had to teach how to find the area of a rectangle.
